Well, Bob had his shirt on with the squirrel and the caption saying "protect your nuts!"

We had ham, turkey, stuffing with cranberries, mashed potatoes, scalloped potatoes, macaroni salad, 2 types of devilled eggs, sweet potato casserole, gravy, rolls from the bakery where I used to work, my mom's apple pie, Bob's girlfriend's key lime and pumpkin pies. And I ate some of everything! Man, it was good, but I felt like my sternum was going to pop. It was very nice. Then Denny and I came home and watched "Night in the Museum" and laughed like crazy.

I fixed duck for Christmas one year. There was hardly any meat on the darn thing and it was way too strong and greasy for me. Never again.

that was my first time cooking it whole. It was a bit overwhelming, kinda gamy compared to a chicken. I cut it up and I'm going to put it in a curry in a few days. Kinda kill the greasy flavor with some spices.

You either got a shitty duck, or cooked it poorly. It shouldn't be greasy and it should definitely be meaty. Keep in mind that duck should be cooked less (much less) than chicken or turkey - cooking it for too long renders more fat, resulting in a 'greasier' taste. Properly cooked duck is delicious, and duck confit even more so.

I didn't know that. It's been so long since I made it I don't remember the cook time. I'm sure i went by a cookbook, but maybe it was too long. I remember buying it because it looked like really good meat, but it was thin, not more than an inch, on the carcass. I don't know if that's average for duck or not. Maybe I'll give it another shot sometime since I'm a better cook now.

My girlfriend's mom made some amazing stuffing with apples, celery and Italian Sausage. It was yum.

I make a good stuffing with sausage too. I'm sure her mother knows this very well.

That's a fairly small amount of meat for a duck.

If you really want to enjoy duck, get some duck legs and duck fat (a decent butcher will do this for you), render the fat until clear, and pour it over the legs in an ovenproof casserole dish with whatever seasonings you'd like. Cook in a 375 degree oven for about an hour, then store as is in the fridge. That's a duck confit, and will last like that for at least a month. Remove from the fat and reheat either in your oven or under a broiler (broiler preferred for crispy skin) and you'll be qualified to dislike duck if that doesn't do anything for you.

In general, though, duck fat is a great fat for cooking. Potatoes cooked in duck fat are particularly tasty.

Oh, and brine your turkeys. I'll give everybody a recipe for how, if you'd like. Or figure one out for yourself. But it makes turkeys (and chickens) much better for roasting, and is therefore very worth it.
