All malmsteen songs (that i know of) are not easy. I know how you feel though, your at the point where ethier a solo is to easy, or to hard. I would suggest Megadeth, SOME cacophony, children of bodom, ect. And use powertabs (a program that gives you the tabs and lets you slow it down as you play along) www.powertab.com

heheh im trying Far Beyond The Sun...that first scale run is fucking annoying just because of ONE note:
-13h14p13p10------------------------------------------
-------------------14-12-10-----------------------
-------------------------------13-11-10----------
-------------------------------------------12-11-9
------------------------------------------------------12-11-9-8
-------------------------------------------
the 11 after the 13....i always hit a 12 instead -_- (when i try to do it full speed heh)
the other sweeping bit is fine though...so ive nearly got the whole intro+first riff down...fun

I agree with Darko.
None of the Malmsteen songs I know on guitar are EASY. If you just take your time with any solo you wanna learn, you can do it. Break up the solos into chunks, and say "today im gonna learn such and such" or if the peice is really hard for you say "this week" or "this month I'm gonna learn this".

re:
you mentioned that you were learning/wanted to learn
to sweep. well, as stated above, malsteens stuff isn't really...easy.
i would try caprice 22( i think) by paginnin. it has 2 or 3 almost beginner
sweeps(if there is such a thing). they have the tab on olga. thats what i did.
- there is one sweep you can learn that isn't to hard, the intro(very
beginning) of leviathan by yngwie, after that it gets a little more complicated.

I know "Far Beyond the Sun" and "Trilogy Suite Op. 5"(and no...not the begining)...and they arent that easy. Yngwie's godly.....and I dont have much to say that hasn't been said already.....but I'd go with 'Black Star'....I don't know it...but I know its the easiest I've see/heard.
