Best way is through example. 6/8 will have six beats in a measure. Best example: Nothing Else Matters (Metallica). The 8 in the signature means that the 8th note gets the beat (which really doesn't matter for your counting purposes, just know that you'll very rarely see 6/4.... as a rule, if it's got six beats to a measure like that, odds are very high you're talking about 6/8).
Others: 7/4. Download "Light Fuse and Get Away" by Dream Theater, and listen to the drum riff that repeats right after the chorus. This is the best example of a 7/4 beat I've yet heard. As you count out the 7 high hat hits, the bass falls on beats 4 and 5. Just listen and learn. If you don't get it, don't worry, it's not a highly common time sig. unless you're playing complex music. You'll probably understand it as your understanding of time signatures gets more advanced.
