Well guitar in jazz (at least the jazz I hear and play) is not mcuh more than chordwork. So that's usually not very interesting. Blues is a lot better, but I figure since you asked for jazz, that's what you want.
Jazz guitarsists? Uhm, Ibanez has a few signature models for jazz guitarists, can't remember their names, but go check the Ibanez site.

you kidding me? jazz guitarists play such interesting things with their strange scales, odd time signatures, and complex phrases. I think jazz is very creative and innovative. And They can shred em just like anybody else.
Check out Al Di Meola. He's a pretty fast and clean player. right now, he's making more new age soft stuff which is pretty good actually, but check out his older stuff, it has more edge.
that's actually the only guitarist i've heard a full cd of. i've heard of these guys: pat metheny, george benson (they use Ibanez), allan holdsworth, and greg howe.
and also jazz will add a sophistication to your music, example John Petrucci, Meshuggah.

Yeah, I figured there probably are intresting things in jazz too, but I've never heard any in the type of jazz that I listen to. I don't listen to much jazz though, so that might be why too.

Wes Montgomery, George Benson, Pat Martino, Pat Metheny, Steve Morse...
Greg Howe also kicks major ass. Check out "Now Hear This".

Yes, gypsy-jazz.
Did anyone play "Mafia"? Most songs in this game are from Django Reinhardt.
