Try this metallica song... I dont remeber the name, and it's not realy a solo but looks impresive couse you play with 3 fingers and it sounds good.

i would say "this love" by pentera it sure wont impress any guitarist (casue its EASY as hell) but the weman like it because its slow nice mellow and is just an overall great solo. its not fast and ripping but its slow and you can really hear the guitar in that solo so when the weman come around let this love "accidently" comr through your amp

The first thing that came to my mind -- not too difficult but catchy -- was Kirk's solo in Master Of Puppets when James is playing the clean part. You know, after the breakdown when everything is slower. It's pretty melodic, though.

The one solo I always loved was any of them from "From Skin To Liquid" by Cannibal Corpse.
For a band whos solos normally are just a whammy bar mess, this is impressive. The first two short ones are well thought out and atmospheric, and the last one that goes to fade is an amazing bit of tapping and atmosphere... Ive always loved that solo.
On the CC front still, I remember my ex listening to They Deserve To Die and the outro solo, saying that was the best part of the album. Wrong, but the solo on that IS also one of their bests, and my favourites.

Frank Gambale's jazz solos are pretty impressive. I've got a few of them down pretty tight. Good for the ladies.
The Ninja by Becker has a pretty sweet solo/intro for the first minute of the song. It's like ninja meets spaghetti western.
Racer x solos are fairly simple, just fast. Check out scarified
spidercrawl by buckethead has a neat intro lick thats pretty easy.
maiden solos are fun as well

All of the leadwork off of Meshuggah's album 'Chaosphere' are immense.
The one in Concatenation, the first track, sounds like someone going mad on some device's keypad, while The Mouth Licking What You've Bled features a blur of notes and The Exquisite Machinery Of Torture and Elastic have passages of Zen jazz weirdness.
Fredrik Thorendahl is just a great guitarist...
