I have found an AMAZING acoustic instrumental band called "Byla". Unfortunatly, they only have 3 songs at the moment available for download but they are great. I strongly recomend checking them out. Has members of Dysrhythmia and Behold The Arctopus too.
www.byla.net
I don't know if anyone mentioned it yet, but "Antermeridiem" is amazing too. Has the dudes from the Born to Shred videos too. Great acoustic work. They have full albums up to preview too (along with powertabs!) http://music.antemeridiem.fi/

The minute of acoustic after Mikael's intro in Dirge for November by Opeth is good (also has a good background solo)
