They're just meant to vaguely describe what the shape/profile of the underside of the neck is like. I don't know about a U, but a C is just a regular round profile, like Fender strat necks, or older Gibson LP's. Some washburns supposedly have a V shaped neck, that is, the center area protrudes out more than the rest of the neck. So you can press your thumb against it more for more leverage.
