Coil tapping, phase switches, switches for parallel wiring, pickup selectors, and in some cases active booster circuits amongst many things. There are some guitars with just 2 humbuckers that have 21 possible configurations available with all those switches.

On that guitar, is a 'chicken head' knob, surrounded with other pots- that'll probably control the active side of the guitar (preamp, overdrive perhaps). Then there's a pickup selector and coil-tapping/switching. Just like Soeru said
