if you liked mainstream music chances are you like music with catchy choruses. i know plenty of em. here are a few:
megadeth
symphony x
dream theater
theatre of tragedy (later stuff aint metal, still great though)
amorphis
anathema (newer stuff)
moonspell (newer stuff)
iced earth
type o negative (the choruses are not a main part of their songs, but they are really great)

with the new AC threads here, it seems like many people think AC is trying to appease audiences, and that they are just a very original band. like they are some form of modern art, where being a shitty band in some weird way makes them good. bad is the new good!

Check out At the Gates. Their music is very heavy death metal style yet they are still very accesible and easy to listen to. They were one of the first metal bands I got into way back when.
