Actually usually its helpful to gently pry them off with a small screwdriver.

the dome metal knobs are held in by a little screw...they are a fucking pain to try and get balanced. Then you have your cheap strat knobs that come off with relative easy. Then those speed knobs which are fucking nuts. Finally some other crazy ones.

Not all dome knobs have a screw. The ones on my Warlock had a plastic sleeve inside which slipped onto the pot shaft like any other.
I wouldn't be using a screw driver or a hammer unless you want a messed up finish (these were jokes tho...right?)
I think the best way is to slide some cloth (the edge of a t-shirt or something) under the knob and try and pull it off that way.
The metal knobs on my Ibanez tho... the screws are done up so tight I can't undo them.

You are going to have to deal with that problem on your own here.
