Those are the first ones that comes to mind.

Marty Friedman's solo from 'Captive Honor' is one of my favorites ever.
King Diamond - Black Horsemen [Andy LaRoque's solo at the end].
Jon Levasseur's solos on the first Cryptopsy album.
Chuck's solo on 'Killing Spree'.
The majority of all Coroner solos.
I love alot of Robert Fripp's solos in King Crimson.
Steve Vai's solo in 'Big Trouble' [from the David Lee Roth CD 'Eat 'Em And Smile] is awesome. I really liked his mid-80's to late 90's playing.
Yngwie's live solo from the Yngwie Malmsteen Collection is probably my top pick though. It's classy, extreme, and towards the end he just goes sick effects-wise in a way I haven't heard anybody do ever.

antestor- rites of death
death- the bass solo and riffs on the philosopher from indiv. thought patterns
Jason Becker- anything from perp. burn
in flames- any of the early material
cynic- veil of maya, celestial voyage, uroboric forms
gordian knot- shaman's whisper, the brooke the ocean (drum and bass solo)
king crimson- most of the guitar work, the solos and the songs
billy sheehan- anything from his solo work and talas
cryptopsy-phobophile ( the whole song is sick)
nile- whenever they don't wank! lol
