theres nothing wrong with panning 2 guitars left and right, even if they are playing harmonized parts.
what you dont want to do is have one playing a solo, and the other playing rythm. during that, both guitars need to be centered
probably you should try panning them different amounts, so that you still get the effect you want, without quite so much separation.
the good thing is you can mess around as much as you like when recording, and the only downside is paying somebody's rate of extortion to do it.
