Well, it depends on how you want it to sound in the mix. I take it you are mic'ing the amp? If so, have the volume at a level where the clarity is best (most amps lose clarity if they are too loud) and stereo mic the speakers (I'm assuming you have a mixer or 2 input soundcard). And then pan the mics hard left, hard right in the mix. A 1/2 to 3/4 volume should do the trick depending on what amp you have.
