So suppose I wanna sand down the neck...any special way at which I should go about doing this, or should I just get some sandpaper and sand it like any other piece of wood?

Just sand with the grain and don't take to much. Take it as slow as you need to and remember to not touch the raw wood with dirty hands. Use tungs oil once you got it the way you like it to protect it.
Remember! Slow and easy over time will give a better result then hacking at it with a chisel.
