How do you do this?

--3--2---0---2--\------0----/--------3-------2--/--0--------
--3--3---3---3--\------3----/--------3-------3--/--3----------
--2--2---2---2--\--0---0----/---0----0-------0--/--0----------
--0-------------\--x---x----/---0---------------/-----------0-
----------------\--2---2----/---x---------------/-------0-2---
----------------\--0---0----/---3---------------/--------h----

How do you mute a particlar string when playing a chord? (the bit in bold)

i would fret the 2 with my index then just rest my middle finger on the X to mute it(just on it but not fretting it)
or
fret the 2 with your index and mute the X with the index aswell (kinda bar it but not enough to fret the X)

Yeah, that works.

In those particular examples I would use the same finger to fret and mute.

i.e. - if using the index finger on fret 2 string 5, I would lean it back against string 4 to mute it. This is necessary when the other three fingers are already busy. A lot of Zeppelin, AC/DC, and Hendrix type chord material will require this.
