Little bits that make songs special.
Dark Tranquillity's "Hours Passed In Exile" chorus has piano triplets that make the song so awesome. Pain of Salvation's "Water" intro has a flat bass that really does a lot for the entire song. Add your own.

I'd have to go with MX Machine's song "No Glam Fags". In the middle the song stops dead and the singer says "whistle dick".

Mithotyn-in the sign of the ravens, the tremolo part near the beggining with the blast beat.
In flames-clayman, when Anders sings "how come its possible...", not because of anders in particular, but everything on that part.
Dark tranquillity-crimson winds, the high noted tremolo part thats played lower and without tremolo later in the song.
Summoning-like some snow-white marble eyes, the middle part of the song with just keyboards then the guitar comes back.

Opeth's Godhead's Lament, where the beginning riff switches into the next one, right at about 0:58 seconds, then next where that riff switches to a melodic part with a solo beginning it.
COB- Needled 24/7, where it switches in to the melodic section before the solo. Chokehold, the melodic section before the solo.......wait what?

opeth - deliverance. at 0:25 where it goes from the tremolo picking into the next riff. that makes me want to break stuff every time.
cannibal corpse - the wretched spawn. the solo of that song, and the miniscule build-up...4 hats, 4 power chords and then a solo i could listen to for hours on end.
finntroll - troll hammaren. the intro.
slayer - angel of death. tom's scream.
opeth - to bid you farewell. second riff. beautiful and a masterpiece.
pantera - suicide notes. i suppose the "part" would be the transition from part to part. i love it how they go from sad and depressing in part one, to the angriest i have ever heard phil.
soilwork - the chainheart machine. the chorus.
that's about all i can think of for now.

I'll stick with metal songs to try to keep this post short. I have a large number of songs that are exceptionally special to me for various reasons.
The last minute or so of Morbid Angel's "Blessed are the Sick" as well as the intro make me spew semen all over the inside of my Dockers (I don't really wear Dockers, by the way).
The outro riff in Suffocation's "Ornaments of Decrepancy". The last breakdown right before it goes into the last two riffs is some fucking incredible buildup. This is one of my favorite songs ever, no doubt about it.
Various weird little things that Morbid Angel do throughout their songs. For example, there is this riff at 2:22 in "Chambers of Dis" that I absolutely love. They do a lot of little things that make me happy, things that aren't even really a big deal, like at 0:40 and 3:56 in "Umulamahri", those little figures put a smile on my face. I'm not sure if it's the sudden change in tempo or what, it just brings about a whole different feel to the song, a whole new energy.
I love the Pseudacris crucifer peeping throughout the entire song of "Summoning Redemption". That seems like such an innovative thing to do. I am pleased.

In Flames - The Quiet Place - the whole song. and it's a rush to play too. if you want a specific part, probably the first time it goes into the chorus, when Anders goes from speaking to screaming - "and then I CLOSE MY EYES!!!". classic.
In Flames - December Flower - yes the solo, but it's just so great. so spit on me.
Kalmah - Skin O' My Teeth - the bit at the end of the intro where you can just barely hear a little froglike scream. makes me laugh every time ^_^
Skyfire - Dimensions Unseen - that section that they play two or three times where the drum rhythm changes. makes my brain go wild.
Disturbed - Down With The Sickness - that crazy screaming but that starts with "and when I dream..." for no other reason than that I find it hilarious.
Children Of Bodom - Kissing The Shadows - the extensive use of harmonics just sends shivers down my spine.
Thrice - Paper Tigers - I know I'll prolly get some jip for this but just don't bother guys. the whole song is just great... possibly perfect. especially the police-siren-esque end to the intro.

theres something thruout the mysteries of satan album by mayhem,funeral fog mostly, that i dont know if it was intentional or not: slight tempo increases during blastbeats as the riffs get more intense,not many bands do it but its a great effect. Emporer also do it alot in the equilibrium album,cant think of the specific songs,havent heard the album in a while, but the drummer will do triplet rolls on the double bass,then switch to 4/4 with a gradual increase of tempo, it seems only black metal bands do this, and only few at that, its this vertigo feel of the double bass i like
his hero is gone-slow songs towards the end of 15 counts, makes me think of mad max movies or any 4-th world nuclear fallout movies,footage of atom bomb testings, i also think of that oppenhiemer quote "i am become death,destroyer of worlds"
man is the bastard-diy cd: the absurdity of this entire album,4 second songs,noise interludes,lo-fi 4 track production,tin can drum sound, the 2 bass players, all done in the 80's,way ahead of its time,very hard to listen too, amazing lyrics
locust-plague soundscape- moog sci-fi sounds of that entire album, very original band, the best of avante-grind/noise
