The only two I can think of off the top of my head are Last Rites by Megadeth (good piece) and In Remembrance by Morbid Angel (another good piece). I don't keep an ear out for piano stuff, those are just the two that stick out in my mind the most.

Star Crossed (Intro) - Arcturus
Remembrance - Sinergy
Enemy Within (Intro) - Arch Enemy
The Tower (Intro) - Avantasia

My favorite is Star Crossed. It sounds so cool, especially the faster part.

The intros of
Iced Earth - The Coming Curse
Opeth - A Fair Judgement

and the outros of
Iced Earth - Travel in Stygian
Opeth - The Leper Affinity

are piano parts.

If you don't mind "unmetal" stuff, check out Dream Theater (first one that comes to mind is Finally Free, but there's lots of stuff)

I like a lot of Norther stuff piano-wise. Of Darkness and Light has some cool parts in it. So do many others.

theres a great part of a musical trilogy, in d minor, which i always find is the saddest of keys, i dont know why but it makes me weep instantly, its very pretty, just simple lines intertwining with a horn part that goes baaa baaa.
i think the composer was very influenced by mozart and bach, so its kind of a mach piece. its called "lick my love pump"

...But seriously, if you're okay with non-metal bands (well, mostly non-metal), the most beautiful album I've ever heard is "Sombre Romantic" by Virgin Black. It's a masterpiece. Classical/metal type stuff mixed. Extremely sad, but soooo beautiful.
And since I'm a classical pianist, I'd suggest Wladyslaw Szpilman. Buuuuuuut, I'm sure that's not what you're looking for.
...Geeze, I'm making myself out to be a pussy.
