As far as bass goes, anything Alex Webster does...even though most of the time they're fills (I'm not sure if the one he plays on the Wretched...DVD, with all the tapping and strumming is a solo or part of one of the songs).
As far as solo's go, there are just way too many to consider, but Jeff Hanneman's solos on "Angel of Death" (the 1st one to be precise) and "Spill the Blood" and the solo from MA's "Enshrined by Grace" come to mind.
EDIT: I forgot to mention "Little Wing" by Hendrix. It's an obvious pick but hell, I like it and feel it deserves mentioning.

I'm not going to touch guitar solos because I'd be here forever. Focusing on bass stuff only, I have to say Cannibal Corpse (pay attention to it, Alex does most of the writing and he puts in some badass basslines).
Watchtower had some of the best bass solos you'll ever heard. Same with Atheist. Absolutely brilliant. I'm listening to "Mother Man" right now. Great bass solos. Cynic had terrific basslines, but few bass solos. Luckily they are just as audible as the guitars, that more than makes up for it.
Black Sabbath. Not nearly as complicated as the other bands I mentioned, but the bass just set up the guitar so well. Great stuff.
Older Iron Maiden had some really great bass work. I have some of the newer stuff, but I can't really remember what it's like, so I can't say how it is now.
Obviously Suffocation has great bass stuff. Suffocation has great everything.
Older Megadeth was full of great stuff, I love "Dawn Patrol" and the bass work in "Peace Sells" is very memorable.
Necrophagist, awesome bass work, but that's to be expected from Muhammed Suicmez. Anything less than extraordinary would be a disappointment. I assume they have a real bassist now, but I haven't heard the new album, nor do I know what the new lineup is.
Here's a band most people will overlook- NUCLEAR ASSAULT! Danny Lilker was some good shit, man.
Some of the stuff I listed is better than others, but the jazz-metal fusion bands have to be rated the highest.

Necrophagist is awesome, don't get me wrong, but bass production isn't that great, you only notice the bass is there when it's doing some "crazy" riff. aside from that, you can barely listen to it.

I'm also leaving out guitar solos, because great guitar solos, while special in their own right, are practically commonplace when compared to the infrequency of a fantastic bass solo.
I'd like to call into attention the following: the bass and guitar trading licks during the outro to 'The Philosopher,' Geezer's chance to shine on a little track called 'Bassically,' any time Alex Webster is given a few bars with the rest of the band shutting up for the time being, like on 'Crushing the Despised.' I'm not a huge Dream Theater fan, but Myung's solo on 'Metropolis Pt. 1' was amazing, making his 'I can beat that' solo on 'The Dance of Eternity' some extremely impressed word that doesn't yet exist in English. Geddy Lee doesn't often get a chance to solo, but when he does on tracks like 'La Villa Strangiato' and 'YYZ,' it's classic. Not to mention when occasionally goes nuts under a guitar solo. Speaking of which, I've always been a fan of what the bass does under the 'Freebird' solo. Most of these guys, and a bunch of others I haven't named, are fantastic all the time, but I'm running out of the energy to remember everyone, so I'll end on this note: I remember hearing that, when on tour for The Gathering, Steve Digorgio would play some of the Testament guitar solos. That sounds cool as hell.
Steve Harris is still a master on the bass, he just doesn't seem to be as high in the production as he once was. Having three guitars probably has something to do with it.

Yes, Danny Lilker is the man. In Nuclear Assault, a little bit of Holy Moses, Stormtroopers of Death, and on Brutal Truth. All of Danny's work there is very good. I haven't heard The Ravenous though, I heard they fucking rule though. I didn't mention Anthrax because i think they suck.

I going to say the bass solo in Slit Your Guts by Cryptopsy. It may be like five seconds long, but its impressive. Don't hear that many bass solos in death metal.

Holy shit! How could I have forgotten the outro to "Stronger than Hate"!? It's awesome.
I was listening to my favorite album again today on my nightly walk, and the song "Epitaph of the Credulous" has this superb bassline jumping in at about 0:57. It actually overpowers what the guitars are playing, and it sounds absolutely fantastic.
