steve morse, who's been doin it a lot longer than zakk wylde, said that what people call chicken pickin (he just does it.. wasn't even totally sure what they were talking about heh) is when he plucks strings with his thumb and middle fingers. he gets down under the strings and gives them a strong pluck, which gives it sort of a twangy telecaster-type sound.

I tried to do that picking thing, it was crappy, its just what a few country music players did back in the day, i really dont see the whole point of it.

Another name for chicken pickin' is hybrid picking. Billy Gibbons from ZZ Top uses it quite a lot.

it definitely gives you a twangy sound, which isn't usually great for metal. of course, i've heard some awesome shred clips recorded on telecasters, so chicken pickin can work in certain instances.
