Joe Pass-jazz guitar, he's very good
Bill Evans-jazz piano (my favorite all time jazz player. played on the monumentous Kind of Blue album)
Miles Davis-legendary.
Ambient/Techno/IDM
Autechre-interesting ,albeit un-melodic IDM
Shpongle-exotic ambient music, weird vocals and strange instruments
Ozric Tentacles-live band, techno style music. Defiantely worth a listen, kind of like Porcupine Tree and Pink Floyd with no vocals
Rock
Thin Lizzy- everybody loves lizzy!
Alice in Chains-the best of the grunge (though they aren't quite grunge) era
Cky-great band, look into the guitarist/vocalist Deron Miller. he's doing a lot for metal
Foo Fighters-actually very good, enjoyable music
Irish Drinking songs
although this isn't a genre per se, two albums everyone should own are 28 Irish Pub Songs and definately Irish Drinking Songs by the Clancy Brothers

I've got a feeling this'll get moved to the bands forum.
Anyway, I love classical music when I'm not listening to metal. Mussourgsky's Night on Bare Mountain is excellent as is the Planets Suite by Holst. Wagner has some good stuff as well and you can't forget the genius of Bach, Beethoven and Mozart.
I also really like Jimi Hendrix's earlier stuff - I'm not too keen on Band of Gypsies but for the main part it's all good stuff.
I also like all those songs I listened to on the radio when I was growing up in the mid-to-late 80's. Stuff like Michael Jackson, Duran Duran, Talking Heads, Dead Or Alive, Frankie Goes To Hollywood - all that classic 80's pop, hehe. They certainly don't make pop like they used to!

Yeah, I keep a listen out for guitar riffs in all that 80's pop. Beat It by Michael Jackson (guesting EVH, of course) is the king of all guitar-based pop songs!
I find that the pop bands back then actually played their instruments and wrote their own songs. Nowadays they earn millions for miming to a song that they had no input during the writing process. There's no justice in this world...

I used to hang around with alot of punks when I was in school, and used to be in a hardcore punk band - Everyone into metal couldn't put 2 chords together unless they were in drop D...
It's a genre that's well worth a listen in my opinion.

With Classical music and stuff like Jimi Hendrix, Soundgarden, AIC, etc I'll whack the CD on, but for 80's music I tend to be out and I'll hear it getting played in pubs or on jukeboxes. It beats listening to the same dance beat all night!

80's mainstream rock- The Cars, REO Speedwagon, etc
The classic Hard Rock, AC/DC, Nugent, Thin Lizzy, etc
