Ignorance DRIPS from your post. Allow me to point it out.
"Opeth are the best hands down" - Thats just stupid. They are good, but until you find a fair, universal method of judging bands, don't tell me who is the best.
"acts that incorporate a lot of acoustic elements into their music" - Oh, is that the only way to be progressive? I've been lied to for a long time.

both agalloch and borknagar are progressive steve, borknagar is 100% progressive except their first two cds. agalloch have long songs with plenty of techincal aspects. just because it doesnt sound like spiral architect doesnt mean it isnt progressive! hear hear to the arcturus, they are definitely good prog. vintersorgs later albums are also (the focusing blur beats you over the head with how prog it is). control denied is good, dan swanos moontower album is proggy, sculptured (offshoot of agalloch, but way proggier.) spastic ink are also in your face prog
edit
farmakon and ephel duath are two more

its what it sounds like. its not repetitive metal (exodus, sodom, darkthrone.) its music that is techinical, evolves, and changes. progressive metal also can refer to a bands whole career, like death and cryptopsy, who became more and more techincal

so Avenged Sevenfold is progressive then? They play alot of different riffs and their songs change alot? I hate all the genre's people try too hard to make genres for bands.

I agree, but i also think that both of those bands have progressive elements.
In other words, i wouldnt class them in the genre of progressive, but i would use the word progressive to describe them. Oh man, i'm not making any sense. I need food.

just because it is not a hyper-technical heavy metalish band with wierd sounds doesn't make it non-progresive..
sure, Katatonia is doom.. prog-doom at that.
Borknagar? Black/viking prog.
I wouldn't label sonata as prog-power or whatever... just power.
But real progresive bands can't be put in a single genre!

If you are looking for the sophisticated progressive heavy metal I'd say Nightwish is a good band. Many of their songs are really quite simple when you take them apart - although of course some aren't easy any way you look at it - but they have a style and technical finesse to them that shows heavy metal in its finest. And Holopainens skills as a poet are impressive indeed.

Tell me - wahat genre would you put Nightwish in then? And don't come here and say something like "symphony metal" or anything of the kind... anyone with the sort of ideas that comes out of Nightwish are worthy of being called progressive; never mind genre definitions.

I'm just getting into prog myself ...
I find it is difficult to find any progressive CDs unfortunately. Having heard Symphony-x's "divine wings of tragedy" several times (and a few other of their songs) I think I've fallen in love with the genre. What really strikes me about this band is that often they're essentially writing classical (sounds like Bach or Mozart) music but with a typical power metal arrangement of instruments (guitar bass vocal drums and the variable: keyboard). In just about every song you can ignore all instruments except for one and just focus on that one and still be really interested. How they manage to write that many independant riffs that all sound good together is beyond me. I guess it helps that they have one guitar and one keyboard instead of 2 guitars, but the keyboard is kind of like adding 2 instruments since both hands often play something independant. The vocalist rules! And those are some of my favorite key solos.
I've also heard some glimpses into the work of other bands, but don't have any albums from:
Gordian Knot
Andromeda
Vintersorg
among some of the other stuff that was mentioned here. I also know some of the popular stuff more extensively like Dream Theater. I didn't know Borknagar was considered as Progressive. I have "the archaic course" and think it is awesome.
By the way, if one was to classify Tool, would they fit under progressive rock? It almost has a metal feel to it but it certainly would stand out if I was to call them a progressive metal band. What do you all think?

Well, I'd consider Genesis Progressive Pop, whereas Yes and Rush are closer to Progressive Metal than pop.

The only bands that are labeled as progressive that I like are
Watchtower
Rush
Spiral Architect
Psychotic Waltz
and "Images And Words" by Dream Theater(I didn't like their other albums at all)

I don't know if anyone heard The Power to Believe from King Crimson. This shit is freaking awesome but it's not really metal. At first I thought they were a hippie band and stuff like that but I was definitely surprised when I heard that album. I'm a big fan of Martyr, Meshuggah and Opeth and I was just stunned how amazing this cd sounded. You get weird time signatures and harmonies and lots of experimental stuff. I'm pretty sure some of you guys will appreciate it.

I'm a Crimson fan. Power to Believe is good to reccommend to metalheads! The guitar work is fucktastic, I've watched some dvd of them playing it together. Really a one of a kind band.

Best Metal bands (that i've heard, personally) (never heard of progressive metal, is it like punk metal with a fast ass tempo, or what?)
Ozzy
Powerman 5000 (i know, i know, they're retarded, but i like them)
Cradle of Filth (based on my hearing of one song)
Korn (hell yes, Twisted Transistor!!!)
I don't own very many, but that's what i like. Oh, and Tool.
Isn't this cool?---

Initially, progressive metal bands fell into two camps, the first being bands who incorporated quirky time signatures and atypical riffing into metal, and the (related) second being metal bands strongly influenced by 70's progressive rock bands such as Yes, Genesis, and ELP. Watchtower and Thought Industry are two excellent examples of the first group, while Dream Theater remains the most well-known of the latter group, as well as the single band most fans point to first when referring to progressive metal. In later years, melodic progressive metal bands have blossomed, many of them not quite as technically oriented as the genre originally defined. Indeed, a lot of these bands can be best described as some mixture of Dream Theater, Queensryche, and Fates Warning, which indeed places these three bands as major innovators in the field. On the extreme end of progressive metal is technical metal, where the musicianship and songwriting variance is placed at an even higher premium. This is demonstrated by bands such as Cynic, and Spiral Architect.

Yeah, you forgot to mention that the band members commonly adorn themselves with black lipstick/finger polish, black hair dye, and plenty of tr00 piercings.

If you are looking to Zero Hour go for either The Towers of Avarice or Metamorphosis

I know. That was a joke. The only progressive thing about Iced Earth is Jon Schaffer's ego.

No, they are metalcore. Gothic guys trying to be metal but failing miserably, and yes, their guitarists are decent, but nothing to rave about. I think I have made my point. Go back to the screamo forums kid, this is a forum for metal bands. Listen to Opeth, some Bodom (pre Hate Crew Deathroll), Necrophagist, and Amon Amarth (just to name a few bands) and come back later and talk real metal.
