I know Trent Reznor (NIN) did the music for Quake 2, and I think he did it for 3 too.
The best music ever in a video game is for Castlevania: Symphony of the Night. There is actually a soundtrack for the game that goes up 80$. I lucky found it for 15$ at some Anime Expo a few years back.

Front Line Assembly did some (if not all) of the Quake 3 music. Their other stuff is really good too.

You can get tabs for video game songs at Video Game Jam: http://www.kontek.net/vgjam. There's all your Zelda, Mario, Castlevania and Megaman stuff on there. The Doom stuff looks wrong, I actually figured it out and the fills are impossible on guitar!
