7's are awesome cause you have basically 2 tunings in 1 in a normal BEADGBE tuning, and you can get the regular B like on a 6-string if you drop the G only a half step. And drop the B a fullstep and you've got drop A. So it's like 4 tunings at your fingertips with little/no modifications, even on a Floyd guitar.
But even though I own an Ibanez Universe I'll always be 6-string dude.

6 is good- if it aint broke, dont fix it.
7 feels too cluttered.
as for tuning variability, i tuned in 5ths for a while. low E was octave below standard and from there tune up in 5ths. instant transformation, feels like youre playing a violin or cello, all classical and shit.

I have only once had the occasion to play a 7-string and that was for a short time. I'd switch at any time to one of these.
